If I use a different midi controller than the GCP to controll the GCX, how do I set it up? Does each loop on the GCX respond to a different CC? Does the GCX work on midi channel 1?

The GCX responds to MIDI Control Change messages 80-87(Latching) or 104-111(Momentary) on MIDI channel 16.
